Yong Pin Restaurant Dim Sum 榕槟茶楼点心 | Penang

Out of many dim sum restaurant in Penang, Yong Pin restaurant is one of the best to Camus and myself. This restaurant has been serving dim sum for many years. We had our early breakfast at Yong Pin last week. We order few types of dim sum with a pot of hot Pu Er tea. Yong Pin Restaurant at Jalan Sungai Ujong. Lo mai kai (steamed glutinous rice with chicken), not oily and texture of glutinous rice was just nice, not overcook like many others dim sum restaurant did, but you can only find a small piece of chicken, pork and mushroom in it. We simply love the tradiotional taste of this fried radish cake. Not easy to get it at some where else. Tasted good and chewy fish ball, with green shallot and red chilli. Curd pork pao. My favourite golden yolk pao. Price for each type of dim sum and tea is clearly listed. Prices and photos for all types of Pao. I do not list out all types of dim sum that we ate, but most of them tasted good, we also bought their "sak kei ma" (1 box RM5) which was very nice too. Sibu Kampua Mee 寺巫干盘面

Being a Malaysian, I am a bit(yes, a bit only) shy to say that I have never been to Sarawak. I give myself an excuse that it is too far away from my lovely hometown, Penang island. The air ticket is quite expensive to travel from here to there. But, I think that I am lucky enough to know a friend from Sarawak, which willing to share with us the recipe of their local famous food, Kampua mee ("Gam Mua" noodle (干盘面)). Kampua mee is from Sibu and it is Fuzhou (福州) food. My first impression about Kampua was it almost same as dry Wan Tan Mee (干云吞面), as the sauce is black in colour and it is dry mee. Well, look at the recipe and cooking method, let's compare the differences.

It has been long time I never bake cheesecake again. Last Saturday, I grab one Anchor cream cheese from bakery ingredient shop and start to bake this Apple & Cranberry Baked Cheesecake.

This is the first time I cook apple ingredient, as I do not really like apple. But after this, I will continue with apple stuff as it really taste delicious. The green apple is not sour at all after cook in sugar and lemon juice. I believe this is a good way to enjoy green apple if you do not like sour, as some people claimed that green apple helps in reducing colesterol. Well, no matter this is true or not, who cares? As I only care on the recipe, and you?

This recipe is suit for those who are not very fancy about cheese but still want to eat cheese as the cheese taste is not very strong.

The recipe can make two 6" cakes.

Ingredients
(A)
170g digestive biscuit (crushed)
80g melted butter (melted)

(B)
1tbsp butter
1tbsp castor sugar
2 green apple (cut into cube)
2tsp lemon juice
1tbsp corn flour
60g water
50g dried cranberry

(C)
250g cream cheese
20g caster sugar
2 egg york
25g corn flour
30g fresh cream

(D)
2 egg white
40g caster sugar
1/4tsp cream of tartar

Method
(A)
1. Combine (A) and mix well.
2. Press firmly into base of a cake tin.
3. Refrigerate until firm.

(B)
1. Cook butter and castor sugar in a pan.
2. Add green apple and lemon juice, cook until apple is lightly soft.
3. Add corn flour in water. Pour into pan and cook until mixture become thick.
4. Remove from heat and stir in dried cranberry. Set aside until cool.
5. Preheat oven at 140C.

(C)
1. Beat cream cheese and sugar until sugar dissolve.
2. Add corn flour and mix well.
3. Add egg yolk one by one, mix well.
4. Lastly, add fresh cream and mix well.

(D)
1. Beat egg whites until form bubble.
2. Add cream of tartar, continue beating.
3. Slowly add in sugar and beat until soft peak form.
4. Add 1/3 of egg white into (C), mix well with spatula.
5. Add in another 1/3 egg white and stir until just combine.
6. Repeat step 5 with last 1/3 portion of egg white.

Assemble cake
1. Take out biscuit base from refrigerator.
2. Spoon and arrange apple filling.
3. Pour in cheese mixture.
4. Place cake tin in hot water bath and bake for 35~40 minutes or until filling is set.
5. Refrigerate before served.
