Sukiyaki 鋤焼 | Dinner At Japanese Sensei House

When I was working in Japan, I attended Japanese class in order to improve my Japanese language. I have a Japanese teacher who taught me the Japanese language for about a year when I stayed there. Before the training end, I was invited to her house for dinner. I feel glad to have the opportunity to visit her house.

 

Goma Dango ごまだんご | Japan Kinkakuji

Is anyone like the Cha Dango that I shared on previous post? Now, I would like to introduced another type of dango. As I mentioned before, there are varities of dangos that can be found in Japan, one is the Cha Dango which is made with green tea. The second type of dango that I am going to share now is black and white version of dango. What is the black and white ball ball stick shown in the picture? Well, the white balls are the dangos which are plain dangos while the blacky is kuro goma (black sesame). It doesn's look tempting to me at all, but since there was a free tasting sample, why should I miss the chance ?  

 

Bread Maker Butter Cake

Have you ever try to bake cake with bread maker? I still remember, one of the attractive point of this new bread maker is the "bake cake" function. I wonder how will the cake taste with this super lazy method. No baking tool (except weight machine) is needed. What you need to do is to dump everything into the machine and press few buttons. That's all!

 

Sugar Paste Cup Cake

I wanted to bake mini cup cake since long time ago. At first, my plan is to bake him a car cake since he likes to play with cars. But from his  respond, he prefer airplane, and sometime motorbike. What he likes the most is Mickey Mouse! But he had Mickey cake on last year birthday, we "reject" his request and ask him choose for others. So, in my final decision, I decided to bake him cup cakes with all those things on top.

IMG_20130716_095156Instant noodles are everywhere around the world, how about instant rice? I saw it few years ago when I was staying in Tokyo but never buy it as it looks weird. This time I am staying in Osaka, the apartment does not provide us with gas cooker, only microwave oven and rice cooker.
Getting dinner after work is a bit troublesome as many shops closed after 8pm. To save the trouble and prevent eating bento from convenient shop, I bought some fresh meat and vegetable to cook during weekdays.
First meal I cooked is sukiyaki. I cooked it with rice cooker, I bought some pork slice, chicken, vegetable, mushroom and of course, sukiyaki sauce.

To cook, add sukiyaki sauce plus some water into rice cooker. Power on rice cooker, when boil, add in pork slice and chicken, then mushroom, then vegetables. When everything is cooked, serve hot with instant rice.

To cook instant rice, tear off a little part of rice pack, add in some water. Put instant rice in microwave oven for 2 minutes. Done! It tasted exactly like what you cook in rice cooker. It is soooooo convenient!

Prepare an egg in small bowl, pour some hot sukiyaki soup to cook the egg.
That's my rice cooker sukiyaki with instant rice and half cook egg.

With Thai Airway, we fly at 8:10am early morning from Penang, arrived and transit Bangkok at 8:50am. Fly from Bangkok at 10:40am, we had arrived Chiang Mai at 11:50am. The total flight journey including transit time just took us about 5 hours, compare with Air Asia, longer time spent for transiting is actually a big waste. This is also another reason why we chosen Thai Airway.

我们乘搭泰航,早上八点十分的班机从槟城飞往曼谷,抵达时间为八点五十分。再乘搭十点四十分的班机转机飞往清迈,抵达时间是十一点五十分。槟城与清迈时差是一个小时。以短短的五个小时我们就能顺利抵达清迈。这也是我们选择泰航的其中一个原因。

 

By the time we touched down at Chiang Mai, taxi driver that we reserved through hotel already waited us at Airport. We quickly grab a free phone sim card and local map, then proceed to our first hotel, Baannamping. On the way to hotel, taxi driver dropped us at local market to buy some fruits, cup noodles and junk food.

当我们抵达清迈机场,司机已经正在等待迎接我们。我们快速的取了当地免费电话卡及地图,就前往Baannamping住宿。途中,我们请求司机停放我们在当地巴刹,购买些水果。我们买了三包各20Baht的水果,准备回旅馆享用。再到隔壁的Tesco Lotus Express买些杯面及零食,就回到旅馆。

Fruits, junk foods and cup noodles

After checked in to hotel, we had our lunch at hotel's restaurant. The meals are not as cheap as what we had expected. A plate of fried noodle Pad Thai is 150Baht, fried rice is 150Baht, apple juice is 85Baht. For taste wise, fried rice is the best, although it does not look attractive and portion is very small, but it really tastes superb. Pad Thai is their local food with sweet and salty taste. The noodle is actually thin version of our koay teow. We expect for fresh apple juice, but it was just a juice from box packet.

抵达旅馆放下包包后,我们就到他们的食堂用午餐。打开菜谱,发觉价钱并没有想象中便宜。以为一盘饭面只需50Baht左右,但并非如此。由于肚子已在打鼓,所以就点了一盘炒饭150Baht,一盘炒面Pad Thai 150Baht,及一杯苹果汁85Baht。

等了一片刻,食物终于送上,果汁有点让我失望,原以为是新鲜果汁,但其实是盒装倒出来的。炒面是当地的食物,带点咸及甜味,觉得很不错。但,最令人难以忘怀的是炒饭,看下去白白的并没什么特别,但味道超好,超香。只可惜分量太少了,想再来多一盘又觉得有点贵。就这样吃完了我们清迈的第一餐。

After meal, we returned to our hotel room, started enjoy our free and easy life. After rest, we borrowed motor bike from hotel to Baan Tawai Village. This place sells many wood products and we like those wooden product so much. If you like wooden product, this is the right place for you!

吃饱后,我们回房休息,开始废了起来,这无忧无虑的感觉真好。废够后,我们向工作人员借了电单车,问了方向后,就到附近的Baan Tawai Village瞎逛。途中不知正确位置,就询问当地居民,他都很乐意的为我们指明方向。没多久,我们抵达目的地,当地所卖的木制物品,比我们想象的还多,只可惜很多都是带不回的,比如座椅橱柜等等,但也有些小样物品,就如灯,装饰品,礼品,服装等。我们购买了木制吊饰品,80Baht一个以作为纪念。

 

The shops at Baan Tawai closed at 5pm. After shopping, we went to night market near to our hotel. It is a small night market but there are plenty types of food. Foods are cheap and delicious too. Papaya salad 25Baht, fried port skin 20Baht, pork ball 10Baht for 10pcs, fried "yao zha kuay" and pandan custard 13Baht, egg tart15Baht, crispy hat biscuit 10Baht, sago dessert 5Baht. We returned to hotel to enjoy the foods we bought, we liked most of them such as the appetizing papaya salad. We faced some difficultly when purchased papaya salad, we do not understand their language and want to ask them the price for papaya salad, we asked the aunty "How Much?", she did not understand us at all, and pointed us what they sell. I looked at the menu and point at number "25", she knocked her head, from there we guess it is 25 baht. Although we faced communication problem, but their help and positive attitude had warm our heart. Unlike many other places, when you ask and nego for price, but in the end you decided not to buy, you will get scold by the shop owner, but we did not see this happen in Chiang Mai.

逛了没多久,差不多傍晚五点,店铺开始关闭了。我们前往当地的巴刹购买晚餐。由于第一次逛当地夜市,看见当地的食物,即便宜,看试又美味,所以很兴奋地,买了一样又一样。当中有木瓜沙拉25Baht,炸猪皮20Baht,猪肉丸10Baht10粒,油条和Pandan Custard 13Baht,蛋塔15Baht,香脆帽子饼10Baht,沙谷甜品5Baht,及水。看,都很便宜吧?买完后,我们回到酒店享用晚餐。木瓜沙拉超好吃,是由青木瓜,红番茄,青茄子等,再加上各种调味品所调出来的。酸酸甜甜非常开胃。还记得我们买沙拉时,问他们"How Much?",他们完全听不明白我们问什么,只在比手画脚告诉我们她在卖什么,后来是看到牌上的价钱表,随便指一指才能让她明白。虽然语言完全不通,但他们用心来明白我们的疑问,及路人的乐心帮忙,温软了我们的心。至于其他的小贩,也是非常的友善,态度非常好,当你提问问题,或者购买东西时,他们都是以微笑来对待你。不只如此,就算问了不买,他们也OkOk笑笑回应你,并不会给你脸色看,和香港人实在是天地之差呢。吃完晚餐,我们继续废,就这样过了清迈的第一天。

DSC_0250_copyIf you like to eat something sweet after dinner, this Ah Pom that located at Lebuh Kurau 5 (Wai Sek Kai喂食街), Chai Leng Park is a good choice for them. The stall that selling Ah Pom is owned by a Chinese auntie; she operated this business for more than 20 years. For those who stay surrounding Chai Leng Park should be know about this Ah Pom. Previously, she was selling the Ah Pom at Chai Leng Park market during morning and at Wai Sek Kai (Wai Sek Kai喂食街) at night. Since I was kid (5~6years old), I like it very much already. May be you will ask me "What's so special?", because you can find Ah Pom/Apom/Apong anyway. I can tell you here, the taste is totally different compared to other Indian style Ah Pom/Apom/Apong.

PandanChif_8This is a long keep recipe that I baked few months ago. Baked it together with other chiffon cakes during my chiffon cake study. I get this recipe from Kitchen Tigress, I found her blog from youtube while I was searching for video on how to make chiffon cake.

 

 

 

Recipe

100g pandan leaves, use only soft and moist young leaves

70g freshly squeezed coconut milk, undiluted

180g egg whites
½tsp cream of tartar
50g sugar

60g egg yolks
50g sugar
60g corn oil
¼tsp salt
100g cake flour (sifted with baking powder)
1tsp baking powder

Method

1. Blend pandan leaves with coconut milk and 1 tbsp water. Strain pandan leave and get green liquid. Set aside green liquid, which should weigh 95 g.

2. Add sugar into egg yolks, immediately whisk with hand whisk until pale and light.

3. Add in corn oil, mix well.

4. Add in green pandan coconut liquid, mix well.

5. Sift in flour, baking powder and salt, stir until well combined.

6. Whisk egg white with electrical hand mixer until big bubbles form, add in cream of tartar.

7. Continue whisk from medium to high speed until small bubbles form (egg white is white in colour now) .

8. Slowly add in sugar, continue whisk at high speed until soft peak formed.

9. Add 1/3 of meringue into egg yolk mixture, mix gently with hand whisk until well combined, you will get a light mixture.

10. Change hand whisk to spatula, fold in 1/2 of remaining meringue. GENTLY fold with egg yolks batter until 50% combined (you will still see white meringue now).

11. Add all remaining meringue and fold GENTLY with spatula again until well combined. I did in in this way: spatula cut mixture into center all the way to bottom bowl, scrap from bottom along bowl side toward you. Rotate bowl few degree and repeat this action until well combined. (your mixture should be very light and volumic now).

12. Pour batter into 18cm chiffon cake pan, level the surface. Bang mixing bowl against worktop 2-3 times to remove air bubbles. Run a chopstick round side of tin to remove more air bubbles. Level and smooth top. Bake in preheated oven at 160C at lowest rack with fan forced for 40-45 minutes.

13. Remove cake pan and invert pan immediately, cool completely before remove cake from pan.

Result

The cake should be evenly green but I saw some white spot, it was due to unbalance mix during step 11, meringue not mix properly with egg yolk batter.

Compare with other recipe which I used 5 eggs, this recipe used only 4 eggs. It is shorter compare with 5 eggs chiffon cake on right (picture below). I prefer 5 eggs recipe.

BlueberryFarm_13The summer holiday in Japan has started on last Saturday. It is an one week holiday. I am very happy that I have a great time to enjoy and rest on this long long holiday.

Today, I have visited to a blueberry farm to pick blueberry. This is the first time I visited blueberry farm in my life. Full with excitement, I arrived in the farm.

In my mind, blueberry is sour. I don't really like sour fruits and I prefer sweet and nature taste. But out of my expectation, the blueberries are so sweet, juicy and tasty. I really have a shock and wonder, "why are blueberries sweet?" Haha...
