Durian Crepe Cake Recipe

After durian butter cake, I have tried with another new type of cake, durian crepe cake. I ate my first mille crepe during my stay in Japan. From there, I get to know mille crepe, a very delicious and special cake. Last year, I ordered one peanut butter mille crepe for Camus on his birthday, and it tasted heavenly. I wanted to make my own crepe too but due to time concern, I have no chance to make one. This time, since it is durian season, I make a durian crepe. Besides frozen cheese cake, this is another type of cake where you can make it without oven. The way of making the crepe is the same as making pan cake. You just need to fried the crepe piece by piece, prepare the filling and stack the crepe together with the filling until you get a perfect cake.

I wanted to bake mini cup cake since long time ago. At first, my plan is to bake him a car cake since he likes to play with cars. But from his  respond, he prefer airplane, and sometime motorbike. What he likes the most is Mickey Mouse! But he had Mickey cake on last year birthday, we "reject" his request and ask him choose for others. So, in my final decision, I decided to bake him cup cakes with all those things on top.

Easy Egg Tart Recipe

I make it! I make it! After years of phobia, I finally overcome it with this recipe. An egg tart recipe that I found from other blogger. I got the recipe and bought a can of evaporated creamer for quite some times. Last weekend, I decided to bake this recipe. When I saw the egg tarts were nicely came out from my smart oven, I was so happy and feel worth it to bake them in front of hot oven on this super hot weather day. This few weeks, the weather in Penang was so hot. It makes my body hot, temper hot! Thank God that the egg tarts turn out nicely, or else somebody might need to sacrifice and listen to my complain again.

宝树堂店
一大早把我们带到宝树堂店,看看介绍员把自己的手烫在热烘烘的粗铁条后,马上涂上他们的宝树堂。这也不是我们第一次来到宝树堂店,它也是中国知名的药膏,适用在被烫伤的皮肤上,涂后有着冰凉的感觉,有着不错的疗效作用。由于家里还剩着,我们也没多买。这家的介绍员也没那么讨人厌,不买也没派"小鬼"来缠身。

等待其他团友的同时,我们买了龟苓膏糖。糖果口感QQ的,我们都喜欢。也在这里买了龟苓膏来吃,虽然没什么特别,一罐RMB10就当作是享受吧!

丝绸厂
又是一间丝绸厂,我们几年前到中国苏州旅行时已去过了。这里可看到蚕宝宝出生直到长大的过程,再得知怎么把蚕吐出来,制造丝绸。看看过程是瞒不错的,但没心买的我们,就是觉得又在这里浪费时间了。等啊等啊,你不买,别人要买啊,就这样大半天完蛋了。

We got a warm welcome by birds outside our room in our second day in Chiang Mai. It was a cooling and wonderful day. We enjoyed our American style breakfast after woke up in later morning. The breakfast came with fried egg, bacon, big sausage and vegetable. It was very delicious. Apart from that, they have coffee and tea for you to choose. Yogurt, orange juice, fruit, oat, milk are buffet style. It was such a wonderful experience to enjoy our breakfast in this beautiful place.

第二天

唧唧唧,小鸟的叫声显示清晨已来到。美好的早晨,清凉的天气,让我们赖床赖得好舒服。这天,我们睡到自然醒,梳洗后再去用早餐。酒店准备美式早餐,有蛋,培根,大香肠及蔬菜,非常好吃,尤其是培根,香咸脆滋味,吃了还想再吃。另外,又有咖啡或茶让你选。奶酪,橙汁,水果,麦片,牛奶则任拿。在这大自然的环境下享用那么丰富的早餐,实在是一种大享受呢。

 

After finish breakfast, we walked back to hotel room. Today, we rent a motorbike from hotel again as it is really convenient to have your own bike. You can travel to any places that you like at your own convenient time. Although Camus does not have a motor license, but he still can fetch me to go here and there, it was really romantic which we can't experience in our own country, an unforgettable experience we had there!

用完早餐,我们再慢步回房休息。由于昨晚的骑电单车经验让我们觉得很方便,想去那,就去那,所以我们租借了酒店的电单车,自己到处逛逛。没有电单车执照的Camus,能在清迈骑着电单车,载着我到处去,是我们在我国所不曾体验的。这又是我们在清迈的另一种新体验,浪漫式的游玩清迈,体会当地人的生活,肯定毕生难忘。

 

At first we were worried and thinking not to rent a bike as we afraid there will be a road block, carry helmet everywhere while you travel is not a convenient way also. But the hotel owner told us normally won't have road block, and if have just told police we forgot to bring license. We also can't believe the helmet can just hang on motor bike, 99.99% you won't lost your helmet! After get the assurance from hotel owner, we rent their bike and continue our journey.

其实早前还在顾虑租不租电单车,一是担心警察遮路,二是担心钢盔领在手上游玩时不便。但问了问酒店的人后,他们都说警察多数不会查牌,钢盔也可以随便放置在电单车上,所以我们更加放心的租下电单车了。

 

Our first stop on this day was Royal Flora Ratchaphruek. When we arrived there, we saw many local people just leave their helmet on top of their bike without any lock. From there you can see how safe Chiang Mai is. Compare with our country, don't say you leave it on bike, even if you hang it on the hook under your seat, which consider lock it, you will end up getting back your helmet "ring" without the helmet and be prepared to spend another few ten or hundred ringgit to get your new helmet.

我们骑着电单车出发到Royal Flora Ratchaphruek,凉风习习,实在令人兴奋。抵达后,停放好电单车,观察周围的电单车,当地人还真的就把钢盔摆放在车上而已,真是不能不佩服当地的治安。要是在我国,别说摆放,就算你锁上了,可恶的小偷还是把钢盔给剪断。

We bought an entrance ticket which cost 100 Baht each. Inside the park, we get a 20 Baht track ticket to ride on track and round the park. The track will stop you at few stations, you can go to every station to have short walking trip. There are many types of flowers and plantation in the park. Among all, attracted me to most was the big winter melon.

我们买了两张各100Baht的入门票后,前往里边去。再购买两张各20Baht的车票,就可由司机载着里面逛,省下很多脚力。园中花草树木多得很,其中一个令人振奋的是大冬瓜,司机载着我们经过该段路时,所有人都哗哗声,这也难怪,冬瓜也实在是太大了吧。

For lunch, we arrived at another local market (Hang Dong market) to have their local food. That market was not a tourist place, hence all menus are written in Thai language. Good thing was they have picture, hence we simply pointed at the picture to order our lunch. From that bowl of noodle, it looked plain and simple, but it was very spicy. After ate, I immediately ran for toilet *diarrhea*. But, I like the noodle so much and it was one of the food that I miss so much, I will return for it again in future if I have the chance.

走完花园,肚子也都饿了,我们骑着电单车到处找吃。最后,我们到达另一个巴刹 (Hang Dong巴刹),享用当地的汤面。食谱都是泰文,就只能看着照片随意点来吃。这碗汤面实在是辣,但非常好吃,也许是太辣了,吃完不久就拉肚子,但,它却是我一直还在怀念的味道。这感觉淡淡又辣辣的,普普通通的一碗面,竟然赢取了我的心啊。

After lunch, we returned to Baan Tawai, the place we went on our first day in Chiang Mai. We bought 2 wall lights at 300 Baht, cheap.

吃完后,我们再回到昨天去过的Baan Tawai, 购买壁灯。两盏灯才用了300Baht,觉得很便宜呢。

Then, we returned to night market near our hotel to get our dinner again.

之后,又回到昨天的夜市购买晚餐。

 

After meal, we had our Thai massage in our room, I expected a relaxing massage, which I experienced at Bali before, but it was a torturing one. I shout from beginning until the end, it was a "pain"ful experience. But one hour massage only cost us 300 Baht.

吃饱后,我们在房内做泰式按摩,以为是舒服的按摩,结果痛得大叫,真是拿钱来折磨自己啊。但一个小时只是300Baht,挺便宜的,按完也觉得身体松了点。

 

After that, we planed our trip for next day.

之后,就计划隔天的行程,由于来前没什么计划的,所以当场计划隔天行程。

Fast & Easy Kaya Jam Recipe PDF Print E-mail

Kaya_2This is a fast and easy version of making kaya recipe. Compare with mother's version kaya recipe, "my" version required much lesser time in making kaya jam. The so-called "my" version is not my own creation, it was my "founding" version from here.

Comparison between mother's version and "my" version:

mother's version "my" version

long hours needed (about 4 hours) fast and easy (less than 30mins)
more patient done fast, suit for everyone
can keep up to a month can keep up to a week

I am too lazy to try mother's version although it is really really delicious. Hence came out my version. For those who like kaya, and lack of time or patient standing long hour keep stirring your kaya jam, my version is actually a very good try. It is better to make home fresh kaya jam since it is fast and easy to make. Try make a small bottle each time and finish it fast when it is still fresh, and make for new badge after finish.

Ingredients:

90g sugar
200 ml undiluted fresh coconut milk
4 young/light green pandan leaves
4 yolks (make sure no egg white at all)

Method:

Kaya

1. Cook sugar in a pot over medium-high heat until light brown, swirling slowly. Reduce heat to low. Keep swirling until sugar is medium-brown.
2. Add coconut milk (beware of steam) and pandan leaves. Increase heat to high.
3. Stir until coconut milk is just starting to simmer gently. Turn off heat.
4. Slowly stir half of coconut milk into egg yolks. Next, pour all of egg mixture into remaining coconut milk in one go.
5. Over medium to medium-low heat, cook combined mixture until slightly thickened.
6. Reduce heat to low. Continue stirring until mixture is thick enough to coat spoon thickly.
7. Discard pandan leaves. Transfer kaya to a bottle. Leave until completely cool.
8. Cover and refrigerate.

ChocBananaI am back again to bake a birthday cake, a fresh cream birthday cake. This time I make chocolate banana cake for Camus's birthday. To me, I am lazy to make this type of cake as I will need to spend 3 hours and above (can up to 5~6 hours) to make a whole cake, from weighting ingredients to decorate the cake. Also, I will accumulate the left over ingredients like fresh cream, sponge cake mix and some others for months, or years...until they are expired...then throw them away. I really feel wasted to throw away those ingredients, and many times I also very lazy to make a move to stand in kitchen for whole afternoon on my weekend to make this type of cake. Of course, some time I "got form got ohm", I will do it happily just like this time, another chocolate banana cake was born in my kitchen, for an OLD baby that was born on 34 years ago.

Let me share the recipe of this chocolate banana cake with photos I have taken.

Recipe
Ingredients
Chocolate Sponge Cake
260g sponge cake mix
260g eggs
70g hot water
1tbsp chocolate powder
80g melted butter

Chocolate Ganache
100g chocolate (cut to small pieces)
50g fresh milk

Filling
400g whipped fresh cream
150g chocolate ganache (you may add all or leave some for decoration)
3tbsp coffee kahlua (optional)
8~10pcs banana (I used pisang "awak" as we like the "compact and smooth" texture of this banana)

Method
For chocolate sponge cake:
1. Mix chocolate powder and hot water.
2. Use mixer, beat sponge cake mix and eggs in high speed for 6 minutes.
3. Switch to medium speed and slowly pour in chocolate liquid from step 1 to sponge egg mixture and beat for another 2 minutes.
4. Lastly, combine melted butter with sponge mixture.
Hint: To prevent sponge mixture separated from melted butter, take a portion of mixture combine with melted butter first, then just combine with the rest of mixture.
5. Pour chocolate sponge mixture into baking pan, bake at preheated oven (160C) for 40 minutes or until cooked.
6. When the cake is cool, slice to 3 pieces in horizontal.

For chocolate Ganache:
1. Put chocolate and milk in a pot/bowl, double boil until chocolate is melted.

For filling:
1. Mix whipped cream and chocolate ganache until combine = chocolate cream.
2. Remove banana skin, slice half into horizontal.

To assemble cake:
1. Place a slice of chocolate sponge cake on cake board.
2. Evenly pour a table spoon of coffee kahlua on sponge cake.
3. Spread a thin layer of chocolate cream with spatula on top of sponge cake.
4. Arrange banana on top of chocolate cream.
5. Spread another thin layer of chocolate cream to sandwich the banana.
6. Sandwich cream and banana with second slice of chocolate cake.
7. Repeat step 2~6 for second layer.
8. For last layer, pour a table spoon of coffee kahlua on sponge cake.
9. Decorate accordingly.
